Rice starch is a type of flour made from rice by the immersion and grinding method. Rice starch is the main ingredient of many familiar foods in Asian countries. Rice starch is popularly used in dishes such as spring rolls, banh canh, banh beo, rice vermicelli, rice cake, pudding (Vietnam), Nian Gao (China), Teok (Korea), Mochigashi, Dango (Japan).

The process of producing rice starch consists of 6 main stages

  • Step 1 (Soak): The water will soak into the rice grains (hydration process) and soften the rice grains, the cell membrane, helping the process of grinding rice and starch be released easily when grinding.
  • Step 2 (Grind): The grinding process will disrupt the grain structure and cell membrane, helping to release the starch contained in the starch of rice cell. In addition, the grinding process helps homogenize the grains to form a powder for rice grains.
  • Step 3 (Stir): The process of stirring helps starch molecules escape completely from the bag of tapioca starch, helps increase the efficiency of starch recovery, helps lipid (fat in rice) to float and be removed. In addition, some light impurities mixed with rice will emerge and be easily removed when stirring.
  • Step 4 (Decanting): To separate the powder from the water, you can use 2 ways to filter, decant or centrifuge.
  • Step 5 (Divide wet powder): After sedimentation, dough is collected. This powder will be divided evenly across the macros to ensure a uniform dryness.
  • Step 6 (Exposure): The powder is dried to a moisture content of less than 15%, for a period of 4-6 hours. The drying process will reduce the moisture content of rice starch to below the limit at which microorganisms and mold may develop. After the dough dries, grind finely and pack.

+     Time of use: 18 months from the date of production

+     Storage in dry and cool place, avoid from the direct sunlight.
